Cheesy Chicken Caprese Gluten-free, dairy free option Weeknights are always so busy that I barely have enough time to make dinner. If you’re anything like me, a 30 minute weeknight dinner is ideal. But you only have 30 minutes to make dinner doesn’t mean It can’t be delicious, cheesy and filled with flavor. 📌Pro tip: use a ziplock bag to shake the chicken with breadcrumbs to lightly bread and make cleanup easy‼️ Ingredients 2 chicken breasts 1 cup breadcrumbs or gluten-free breadcrumbs 1 egg 6-8 slices of mozzarella cheese or dairy free 1-2 tomatoes 2 tbsp balsamic glaze 2 tbsp chopped basil or spinach (optional) Directions 1. Make the chicken cutlets by dipping each chicken breast in egg then covering with breadcrumbs. 2. Add olive oil to a pan. Heat on medium heat. 3. Add chicken cutlets to the frying pan. Fry for 4-6 minutes on each side or until chicken is fully cooked through. 4. Top each chicken breast with cheese. Add to oven at 350 for 3-5 minutes or until the cheese is melted. 5. Remove from oven and top with tomatoes, balsamic glaze and basil.
