Full recipe belowwww AD Octopus Energy Banana topping🍌 • 80 g unsalted butter, softened • 100 g light muscovado sugar • 4 large bananas Sponge🍰 • 200 g soft pitted dates • 200 ml hot Earl Grey tea • 1 tsp bicarbonate of soda • 75 g unsalted butter (softened) • 65 g light muscovado sugar • 2 large eggs • 165 g plain flour • 1½ tsp baking powder Banana toffee sauce🥛 • 1 banana, mashed • 90 g unsalted butter • 200 g light muscovado sugar • 1 tbsp black treacle • 150 ml double cream • 2 pinches flaked sea salt Method: 1)Heat the oven to 180°C. Grease and line a 23 cm cake tin. 2)Mix the topping butter and sugar together. Spread over the base of the tin. Slice the bananas into and arrange over the base 3)Soak the dates in hot Earl Grey until softened,then mash. 4)Beat the butter and sugar until light, then beat in the eggs. Add the soaked dates, followed by the flour, baking powder, and bicarb. Mix until combined. 5)Spoon over the bananas and bake for 35–40 minutes. Leave for 5minutes, loosen paper, then turn out. 6) For the sauce, add the mashed banana, sugar and butter to a pan and heat until melted together. Add the cream and black treacle, bring to the boil and cook briefly until smooth. Stir in the sea salt. 7)Serve warm with the banana toffee sauce.
