A sprinkle of Vegeta makes everything better, like this Smoky Chicken & Halloumi Tray Bake. Here’s how it’s done. Cook time: 40 mins Prep time: 10 minutes. Serves 4 Ingredients Tray Bake🍗🧀 • 4 boneless, skinless chicken thighs • 2 Tbsp extra virgin olive oil • 1 Tbsp Vegeta Chicken Stock & Seasoning Powder • 1 Tbsp Smoked Paprika • 500g potatoes, cut into wedges • 1 red capsicum, cut into chunks • 2 corn cobs, halved • 1 red onion, cut into wedges • 100g halloumi, sliced or torn Smoky Lime Mayo 🍋 • 1/3 cup whole egg mayonnaise • 1/2 tsp Vegeta Organic Stock & Seasoning Powder • 1 tsp Smoked Paprika • Juice of 1 lime To Serve 🌿 • Fresh coriander leaves • Chilli Oil Method 1. Preheat the oven to 200°C fan-forced (or 220°C conventional). 2. Place the chicken thighs, potatoes, capsicum, corn and red onion onto a large roasting tray. Drizzle with olive oil and sprinkle over the Vegeta Chicken Stock & Seasoning Powder and the smoked paprika. Toss well to ensure everything is evenly coated. 3. Arrange the ingredients in a single layer. Roast for 30 minutes, turning the vegetables halfway through if desired. 4. Scatter over the halloumi and return to the oven for a further 5-10 minutes, or until the chicken is cooked through, the vegetables are tender and caramelised, and the halloumi is golden around the edges. 5. Meanwhile, make the smoky lime mayo by combining the mayonnaise, Vegeta Organic Stock & Seasoning Powder, paprika and lime juice in a small bowl. Stir until smooth and well combined. 6. Transfer the tray bake to a serving platter or serve straight from the tray. Finish with fresh coriander, a drizzle of chilli oil and generous spoonfuls of smoky lime mayo. 7. Serve immediately while the halloumi is warm and the vegetables are beautifully caramelised. Make every meal un-Vegeta-ble.
