One of my all-time favourite weeknight dinners, made even better with @castellocheesecanada Havarti. #ad It’s creamy, buttery and gets SO melty over the top of this skillet. Makes 5 servings 1 lb ground turkey 2 sweet potatoes, diced 1 jar salsa 1 can black beans, drained & rinsed 2 tbsp taco seasoning ¾ cup water 2 tbsp olive oil 2 handfuls baby spinach 1 block Castello Havarti Cilantro + lime, to finish 1. Heat the olive oil in a large skillet over medium heat. Add the sweet potatoes and cook for 2–3 minutes. Add a splash of water, cover and let steam for about 5 minutes, until they start to soften. 2. Add the ground turkey and taco seasoning and cook until browned. Stir in the salsa, black beans and water, then cover and simmer for about 10 minutes or until the sweet potatoes are fork tender. Stir in the spinach. 3. Top with Castello Havarti, cover for another 1–2 minutes until nice and melty, then finish with cilantro and lime.
