So! The story goes like this…. During a particularly hot summer in the early 19th century in northern Taiwan, a tea farmer discovered that his tea bushes had been attacked by tiny insects known as tea green leafhoppers. The insects had bitten the tender young leaves and buds, leaving them curled and damaged. Other farmers believed the crop was ruined, but instead of throwing the leaves away, the farmer decided to harvest and process the tea leaves. To the farmer’s surprise, the finished tea developed an extraordinary fragrance and flavour unlike ordinary oolong, it was wonderfully sweet, with aromas reminiscent of honey, ripe fruit, flowers and muscat grapes.
