Cook the Rajma: Pressure cook soaked kidney beans with 3 cups of water and salt for 10 whistles until soft. 2. Prepare the Masala: Heat oil/ghee in a pan, add cumin seeds, and let them splutter. Sauté onions until golden brown. Add ginger-garlic paste and cook until fragrant. Add tomato puree, green chili, and spices. Cook until oil separates. 3. Combine & Simmer: Add the cooked kidney beans along with the water they were boiled in. Simmer for 10-15 minutes until the flavors blend. 4. Final Touch: Stir in garam masala and garnish with fresh coriander. Serve hot with steamed basmati rice and a side of onions or a simple salad.
