Add in olive oil, onion, garlic and mince and cook until the meat is brown. Add passata (or bolognese sauce), chicken stock and mix. Add ricotta, mix again, and add lasagna sheets. Place on lid and simmer for 20 minutes over low to medium heat. Remove lid, add cheese, return lid and simmer for a further 5-10 minutes until cheese is melted.
