The Macallan Harmony Collection V draws inspiration from the world of single-garden teas to create Inspired By Phoenix Honey Orchid Tea, a remarkable limited-edition whisky crafted in collaboration with JING Tea. Chef Homan Tsui of Imperial Court at MGM MACAU celebrates with four original dishes that beautifully complement the expression’s rich flavor profile. Marinated sea whelk with The Macallan whisky and spicy sauce features a classic Cantonese sauce. “But here I use The Macallan whisky,” says Chef Tsui. “A touch of satay adds heat and helps bring out the whisky’s light, floral notes. “Dishes containing nuts pair perfectly with The Macallan whisky. My steamed grouper fillet with egg custard, rolled with walnut and ham features freshwater algae with subtle marine notes that create an intriguing contrast with this whisky. “At the table, I pour The Macallan whisky over my dish of Phoenix Dancong tea smoked Wagyu beef cheek with Chinese pickled cabbage and invite guests to inhale the delicious fragrance.” The chef’s refreshing dessert, roselle jelly, served with pistachio, coix seed, red bean and brown sugar syrup, offers a subtle Dancong tea aroma that echoes the delightful fruity and floral flavors of The Macallan Inspired By Phoenix Honey Orchid Tea. Crafted without compromise. Please savour The Macallan responsibly.
