Your weekly weeknight dinner inspo has arrived with this Za’atar chicken with couscous, crushed olives, and feta recipe! 🫒🍗 Simple, quick, yet delicious- this dish has got you covered! #OlivetoCook Ingredients: -1 1/2 tablespoons #CaliforniaOliveRanch Extra Virgin Olive Oil -4 bone-in skin-on chicken thighs -1 tbsp za’atar -1 tsp salt -½ tsp pepper -1 ½ cups pearled couscous -1 ⅓ cups water -½ cup castelvetrano olives, crushed and roughly sliced -¼ cup feta, crumbled -½ tbsp parsley -1 lemon Directions: Preheat oven to 375F. In a large oven-safe pan, heat 1 tablespoon olive oil over medium-high heat. Season chicken thighs with za’atar, salt, and pepper, and place skin-side down in the pan. Cook for about 6-8 minutes until the skin is deeply golden brown and then flip the chicken. Cook for an additional 5 minutes and remove from the pan. To the same pan, add the couscous and water and stir to combine. Nestle the thighs back into the pan skin-side up, cover, and place in the oven. Bake for 12-15 minutes until the chicken reaches 165F. Let the chicken rest for 5-10 minutes. Meanwhile, make the olive topping. Combine the olives, feta, parsley, ½ tablespoon olive oil, and zest of the lemon. Scatter the olive topping over the chicken and couscous. Finish with the juice of the lemon, serve right out of the pan and enjoy!
