Colourful, wholesome and full of goodness. With Magnifisan Maize Meal, these veggie-packed pap cups turn everyday school lunches into nourishing Magic kids will look forward to. Ingredients: * 2 cups cooked Magnifisan pap * 1 cup finely chopped vegetables (pepper, spinach, carrot) * 2 eggs * ½ cup grated cheese * Salt & pepper Method: 1. Make sure the cooked Magnifisan pap has cooled slightly. 2. Use a fork to loosen it so it’s soft and easy to mix. Place the maize meal into a large bowl. 3. Add the chopped vegetables, eggs, grated cheese, salt and pepper. 4. Mix thoroughly until everything is evenly combined and the mixture is thick but spoonable. 5. Lightly grease a muffin tin with oil or non-stick spray to prevent sticking. 6. Spoon the mixture evenly into the muffin cups, filling each about three-quarters full. 7. Gently smooth the tops with the back of a spoon. 8. Place in a preheated oven at 180°C and bake for 20 minutes, or until the veggie cups are firm, lightly golden on top and set in the centre. 9. Remove from the oven and allow the pap veggie cups to cool completely in the tray before removing. 10. Once cooled, pack into lunchboxes or store in an airtight container in the fridge.
