HOT HONEY CHILLI CRISP BACON BURGERS - makes 4 Hot honey bacon 8 rashers streaky bacon 2 tbsp honey 1½ tbsp chilli crisp 1 tsp rice vinegar Burger sauce ½ cup mayo 1 tbsp Dijon 1 tbsp pickle juice 1 tsp chilli crisp ½ tsp Worcestershire sauce Lots of black pepper Burgers 600g beef mince Salt + black pepper 4 slices burger cheese 4 eggs 4 Tip Top Grill House Seeded Burger Buns Shredded iceberg 1 tomato, sliced Dill pickles Mix the honey, chilli crisp and vinegar, brush it all over the bacon and bake at 200°C fan for 12-15 mins until sticky and caramelised. Mix all your burger sauce ingredients together. Divide the beef into 4 balls, smash into a ripping hot pan, season with salt and pepper, flip and melt the cheese over the top. Fry the eggs until the edges are super crispy but the yolks are still runny. Toast your buns then go burger sauce, lettuce, tomato, pickles, cheesy beef, hot honey chilli crisp bacon, crispy egg and a little more sauce. Squish it. Let the yolk go everywhere.
